Details

Parsnips closely resemble a carrot in shape but taste more like a sweet potato. A cream colored root vegetable with a subtle nutty flavor, they are not usually served raw. They are often used to flavor stews, or pureed as a base for soup, but can also be roasted as a side dish. Small to medium sized parsnips are sweetest. Parsnips are rich in fiber and vitamin E, selenium and zinc. They can be stored, wrapped in paper towels, in the refrigerator for up to two weeks.
