Rough on the outside, sweet and buttery on the inside, beets add a sweet taste and a beautiful red color to many dishes. They are good boiled, roasted, pickled or in salads. Try cooking them in orange juice and water, and slice to serve. Beet tops can be cooked like spinach. In fact, in ancient times, that was the only part they ate! Beets are low in fat, saturated fat free, low in sodium, free of cholesterol and a good source of folate. Available year-round. Store in refrigerator.
